Tandoori Chicken Pizza
Here's a new way to enjoy bananas – on your pizza! Give this tandoori chicken pizza a go!
Ingredients
2 chicken breasts
1/2 cup tandoori paste
1/4 cup Greek yoghurt
1/4 red onion - very thinly sliced
4 Dole Bobby bananas
2 large pizza bases
1/2 cup tomato pizza sauce
1/3 cup cashew nuts
Mango chutney
1/2 cup Greek yoghurt
1/3 cup mint - diced
Juice of half a lemon
1 small garlic clove - minced
Zest of a lemon
Handful of fresh coriander
Method
Pre heat the oven to 220 fan bake.
Slice the chicken into bite sized pieces, place into a bowl. Mix the tandoori paste, yoghurt and chicken pieces together. Set aside.
Slice the red onion into thin pieces and bananas into rounds. Set aside.
Heat a wok or large pan over a medium heat. Add a good glug of oil. Fry the chicken pieces for a couple of minutes until just cooked. Take off the heat and set aside.
Spoon the tomato sauce over both pizza bases. Evenly distribute the chicken over both bases. Then add the sliced banana around the outside of the pizza and with a couple of slices near the centre.
Scatter the cashews over the top, and then dot small spoonfuls of the mango chutney around the outer edge of the pizza. Grate some fresh Parmesan on top, then bake in the oven as per the pizza base instructions (should be about 8 minutes)
Whilst the pizza is baking, mix the mint, yoghurt, garlic and lemon juice togetherin a small bowl. Set aside.
Once the pizzas are cooked, drizzle over the yoghurt sauce, then sprinkle with the thinly sliced red onion, lemon zest, fresh coriander sprigs and enjoy!
Feeds four for a light meal – serve with some chips and a salad on the side.
Notes: there will be extra yoghurt sauce leftover but serve this and any extra mango chutney alongside the pizza and you can add more to your own slice if you like.
