Sweet & Sour Mussels Pineapple Sauce

Try this delicious summer recipe

Ingredients

1 green capsicum roughly chopped

½ Tropical Gold pineapple cored and cut into small cubes or 1 can of Dole pineapple chunks

3 tbsp white sugar

2 tbsp rice vinegar

1 tbsp soy sauce

1 tbsp tomato paste

1 tsp sesame oil 

50ml of stock/water

½ tsp cornflour (optional)

Method

Method

Add sesame oil to a wok and add capsicum. Once browned slightly add the pineapple. Stir through tomato paste and cook out slightly. Add the rest of the ingredients and simmer for 5 minutes. If required add ½ tsp of cornflour to 2tsp cold water and make a slurry, add this to your sauce to thicken slightly. Add clean and steamed mussels to the sauce and serve.
