Steak and Pineapple Slaw Burrito

Juicy steak, bold spices, and a Dole pineapple coriander slaw - this burrito has it all. It’s the kind of weeknight dinner that feels like a weekend treat!

Ingredients

1 heaped tablespoon of Dole crushed pineapple 
1 tablespoon of sour cream
Handful of coleslaw 
Small handful of coriander - roughly chopped 
1/2 lemon 
2 tablespoons of cooked white rice 
1/2 avocado - smashed 
25g of tasty cheese - grated 
Chipotle sauce 
1 ribeye fillet 
1 wrap 

Method

  1. Place a pan with a drizzle of olive oil over a medium to high heat. Add the steak and cook until medium rare. Set aside to rest for a few minutes before slicing thinly.
  2. Grab a large bowl and add coleslaw, Dole pineapple, coriander and lemon juice. Toss well. 
  3. Grab a wrap and smear over the sour cream, and smashed avocado then top with pineapple coriander slaw, steak, cheese, rice and chipotle sauce. Fold up into a burrito and roast on both sides in a hot pan. Cut in half and enjoy!
