Pina Colada Mocktail (in a pineapple)
This piña colada is served with a twist, in a pineapple bowl! Using the fresh pineapple flesh and store-bough pineapple juice, you can blend this drink to your preferred consistency.
Ingredients

1 pineapple

2 cups ice cubes

3 ounces white rum

3 ounces of coconut cream

4 ounces pineapple juice

2 maraschino cherries for garnish
Method
- Start by cutting the top off the pineapple, reserving the leaves for garnish, if desired.
- Run the knife inside the pineapple (1/4 to 1/2 inch away from the peel) and scoop out the insides; the flesh can be used to thinken the drink if desired.
- Either mash the pinapple flesh to extract the juice or supplement with pineapple juice to reach the 4 ounces.
- In a blender, place ice, rum, cream coconut, pineapple juice and up to 1 cup of reserved pineapple flesh (as needed).
- Blend until smoothe then pour the mixture in the pineapple bowl and garnish with the reserved leaves and maraschino cherries.
