Easter Banana Bread
The golden syrup in this recipe perfectly complements the banana flavour making this a rich and tasty family favourite.
Ingredients
125g butter, softened
1 cup brown sugar
1 tsp vanilla essence
2 large eggs
2 Dole bananas, mashed
1 ½ cups flour
1 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
1 cup chocolate Easter eggs or Easter chocolates, roughly chopped
¼ cup golden syrup

Method
Preheat the oven to 170°C.
Beat butter, sugar and vanilla with an electric mixer until light and creamy. Gradually add the eggs and beat well. Add the mashed banana.
Sift in the flour, baking powder, baking soda and cinnamon.
Mix lightly, then add the Easter eggs and golden syrup. Stir until just combined. Transfer the mix into a greased and floured 23cm x 13cm loaf tin. Bake for 50-60 minutes or until a skewer comes out clean. Allow to cool in the tin.
Once the cake is cool, ice with your favourite icing and decorate with chocolate easter eggs and easter chocolates.
