Dole Banana Protein BallsTime to make: 10 minutes
1 cup ground almond meal
1/2 cup protein powder (chocolate or vanilla)
2 ripe Dole bananas
2 Tbsp good quality cocoa powder
2 Tbsp coconut oil, melted
2 Tbsp honey
¼ cup desiccated coconut for rolling
1. Place all ingredients except coconut in a food processor and blitz until well combined. If the mixture looks dry you can add a tablespoon or two of water or coconut milk until you achieve a good rolling consistency.
2. Sprinkle coconut onto a plate. Roll spoonfuls of the mixture into balls, then roll through coconut to coat. (You’ll probably need to wash your hands several times throughout this process – it can get messy!)
3. Chill for 30-60 minutes to firm up then dig in!
