Crispy Fish Bites with Pineapple Salsa and Avocado Puree

Ingredients

Batter

1 cup Rice flour

1 tbsp Baking powder

200ml Water White fish, fillet, skin off, bones removed

 

Pineapple Salsa

½  Tropical Gold Pineapple core removed and diced or 1 can of Dole pineapple chunks

½ Red Onion diced

½ Red Capsicum seeds removed and diced

½ green chilli sliced

Mint bunch roughly chopped

Coriander bunch roughly chopped

Salt and pepper

Squeeze of lemon juice

 

Avo Puree

1 Ripe Avocado

Lemon Juice

Salt

Method

Heat fryer to 180C

Cut fish into even bite sizes. Combine all the pineapple salsa ingredients. Blend avocado puree until smooth. 

Make Batter by combining dry ingredients and making a well in the centre, add the water and mix until smooth. 

Coat fish bites in the batter and fry for 4 minutes or until golden and crisp. Season with salt.
