Cinnamon crumble banana bread drizzled with icing drizzle
Warm, cozy, and just sweet enough! This cinnamon crumble banana bread with icing drizzle is the kind of baking everyone will be asking for seconds of. Made with Dole bananas, it’s a treat that never lasts long.
Ingredients
2 ripe Dole bananas
1/2 cup of white sugar
1/2 cup of brown sugar
2 eggs
2 cups of flour
120g melted butter
1 teaspoon of baking powder
1 teaspoon of baking soda
1 cup of milk
1 cup of icing sugar
Cinnamon crumble-
2 tablespoons of flour
4 tablespoons of brown sugar
50 grams of cold butter (cut into cubes)
1/2 teaspoon of cinnamon
Method
Preheat oven to 180 degrees. To a bowl add melted butter, white sugar, brown sugar and eggs. Whisk until pale and creamy. Add milk and whisk until just mixed through.
Mash up the Dole bananas using a fork and add into the mixture and stir through. Whisk in flour, baking soda and baking powder. Stir through until combined.
Pour into a greased baking tin.
Grab a bowl and add the cinnamon crumble ingredients. Using your fingers, mix it all together to create small lumps. Sprinkle over the batter then pop into the oven for around 45 minutes.
In a bowl mix together icing sugar and a drizzle of hot water. Keep stirring and adding water until you reach the right consistency.
After you have removed the banana bread from the oven and it has cooled a little it’s time do drizzle over as much icing as you desire.
