Cajun salmon tostadas with guacamole and pineapple salsa
Fresh, fun, and full of flavour! Try these delish Cajun salmon tostadas with guacamole and pineapple salsa using fresh Dole pineapple.
Ingredients
Pineapple salsa -
3/4 cup of fresh dole pineapple - diced
1/2 red capsicum - diced
1/4 small red onion - diced
Guacamole -
1 avocado
A dash of lemon juice
Salt and pepper to taste
1 salmon fillet - cut into cubes
2 small tortillas
1 teaspoon of Cajun spice
Method
Preheat oven to 180 degrees. Grab a large baking dish and lightly coat both sides of the tortillas in olive oil. Place in the oven for about 5 minutes then flip them over and cook for a further 5 minutes or until the tortillas are crispy and a light golden brown colour.
To a bowl add all of the pineapple salsa ingredients and give it a stir.
Grab another bowl and add salmon, Cajun spice and a drizzle of olive oil. Cook in a hot pan until the salmon is just cooked through. This doesn’t take too long at all!
Add the avocado to a bowl, season it well and add a squeeze of lemon juice. Smash it until it’s nice and smooth.
Grab the crispy tortillas and top with smashed avocado, Cajun salmon, pineapple salsa, some fresh coriander and enjoy!
