1 cup flour
2 teaspoons baking powder
½ teaspoon baking soda
2 tablespoons caster sugar
½ cup milk
2 Dole bananas, cut into small pieces
Butter for frying
1. In a bowl, sieve together the flour, baking powder, baking soda and caster sugar. Add the egg and milk and whisk until smooth. Add the banana and gently fold through.
2. Heat a large non-stick sauté pan over a medium-high heat, then add the butter. Once melted, ladle spoonfuls of pikelet batter into the pan. Once bubbles begin to form on the surface of each pikelet, flip and fry until golden brown.
3. Serve pikelets with honey and sliced banana.
